Menu Monday… recovering from the Apocalypse!!!!

Last week was cah-razy around here since an Apocalyptic Stomach Bug blew in and wreaked absolute havoc on ALL five of us… in just THREE days time.  Ugh.  I will spare you all the nasty details, {you can thank me later} but it was B-A-D. 

Chris lost NINE pounds, and I lost FOUR!  It was definitely a week I am GLAD is over!!  Don’t you worry though.  We are well on our way to gaining it all back.  I DID enjoy seeing that glorious number on the scale for that short marvelous moment.  It was a number I don’t think I’ve seen since I was a single gal.  :) 

Some of our meals from last week got bumped to this week which meant I only had to prep TWO meals this week… Foil Baked Salmon and Sour Cream Chicken! 

I am really excited to try the Sour Cream Chicken.  It is a Pinterest inspired recipe, {of course} and I couldn’t believe how easy and good it looked.  It’s a bit unusual {The last thing you do is put a small little pat of butter on each piece of chicken!}, but, uh, easy and yummy?  Yes, please!!!  That is definitely my kind of dinner.  :)  I am hoping it lives up to all my expectations. 

The recipe calls for Pepperidge Farm bread crumbs that I couldn’t find, though I did my best since the recipe very ominously instructed to accept NO substitutes

Hopefully it will still be a success even though I had to “accept a substitute.”  :)  I went with Progresso Panko bread crumbs since they usually end up crispier than regular bread crumbs.  Crossing my fingers and hoping for the best. :)

Two Meals prepped in just 23 minutes!

    I love the crock pot BBQ chicken! Instead of serving the chicken breasts I shred them and make shredded BBQ chicken sandwiches. So yummy!

    Oh goodness! So glad you all are feeling better! Levi started throwing up and running a fever last night around supper time. EEK! I hope nobody else gets it! Thankfully he seems to be doing better today.
