Menu Monday… dinner & lunch prepped!

Up on the dinner menu this week…

Monday… Cornflake Chicken x2

I have to admit that as far as prep time is concerned, the Cornflake Chicken was a BIG FAT FAIL!  Oh. my.  This was one giant PAIN in the patooty. The recipe said to dip your chicken in the flour, then in the melted butter, and then in the crushed cornflakes, but what they failed to mention, was that the flour and the melted butter somehow form a glue mixture that will NOT stay on the silly chicken!  With no butter on the chicken, the cornflakes really don’t have a prayer of sticking, and the whole thing is one colossal MESS! 

I managed to POWER THROUGH and finish this one somehow, and I am REALLY hopeful that somehow these will at least taste good, even though this recipe is so far in the Pinterest Fail category. 

On the other hand, the Asian Salmon and the Wings were SOOO easy!!!  Two out of three really ain’t bad, I know.  :)

Due to my butter and flour issues, my time was not the greatest this week!  1 hour 11 minutes to prep SIX MEALS…

And on the lunch menu

I really really liked having our lunch meals prepped ahead of time last week, so I decided to try it again this week.  I prepped them Saturday afternoon, so I wasn’t adding one more thing to Sunday… at least this week, anyway. 

For some reason, it takes me forevah, so I really don’t know if it will be something I can or will keep up.  :)

I’ve been looking too into the idea of making our lunches “visually appealing,”  and have been gleaning some creativity and inspiration via who else but Pinterest.  :)

I picked up some sandwich shape cutters at Walmart and made some cute fruit kabobs with toothpicks!

The idea is that making your picky kiddo’s lunch food LOOK fun and different means he or she will be that much more likely to eat even new or healthy things happily!

This could be why it took me forever, ha ha!  :)

    Looks good! I always like seeing what you've put together for the week. Did you try patting your chicken dry before dipping it in the flour and butter? That helps it to stick better. Sorry it was so frustrating for you. Have a great week!

    If you are doing the chicken again…pat it dry before you do the flour. My mom and I do it differently though. We dry it, dip it in oil (whatever type you would care for) and then put it in the cornflakes. We pat the cornflakes on but they stay a lot better with the oil and it helps it not be as heavy.
