I’ve very excited about the Cream Cheese Enchiladas!  You’ve got to check out this recipe.  It looks very yummy and is pretty easy too.  :)  They are supposed to make a ton, so I will be dividing this one and sending half to the freezer. I ended up forgetting the stinkin’ tortillas Saturday {ugh!} so I just prepped the ingredients to go IN the enchiladas and will have to assemble them tomorrow.   They are going to be especially delish with rice and black beans too!  :)  Mmmm, mmmm!

28 minutes to prep FIVE meals… Woo to the hoo and Merry Christmas!

Doubled one recipe, divided another and wala… three meals just turned into FIVE!  :)

Pretty neato, right?

Mmmm! Looks like it's gonna be a good week at your house. I think I might try the pork chops tonight. Thanks for the great ideas!
