Today is our FIRST DAY OF SCHOOL!!!  I can hardly believe our summer is officially OVER!  In light of that, I planned a SUPER easy {though brand new} crockpot recipe for today since I knew my mind and attention would be altogether elsewhere! Cream Cheese Crockpot Chicken!  Mmmmm!  This recipe calls for a LARGE amount of chicken… more than we would EVER eat… so I am splitting this and adding a meal to my freezer stash!

Another new recipe this week is the Garlic Baked Shrimp!  Doesn’t it look so good?? 

Christina asked me this week {after she saw me pin this} where I get my shrimp for cheap.  I guess she just assumed knowing my frugalness that I wouldn’t be forking out big money for something expensive.  :) 

I had never even attempted to cook shrimp before following Michelle’s fabulous  5 dinners 1 hour meal prep plan.  It was definitely on the “too hard for me to figure out how to cook” list.  BUT… she shared that she just gets a frozen but cooked bag at Wal-Mart for about $5!

Now, I do realize that will give any true chef a major panic attack, so don’t anybody jump down my throat.  Shrimp isn’t the healthiest food, but I don’t think we have it that often, so that makes it better, right??  :)  

This recipe does call for white wine, but if you’re like me and don’t cook with wine, I found some substitutes via google.   :)  Three easy ones suggested are apple juice, white grape juice, or apple cider vinegar. 

You can also use 1/2 tsp. garlic powder instead of the cloves, and 2 tablespoons lemon juice instead of half a lemon.  :)

Four meals {including my freezer meal} prepped in just 27 minutes…

Due to going BACK to school this week, I was inspired {by Michelle} to try out prepping our lunches for the week too!!  Having our meals ready for us in the fridge will definitely ease the craziness that sometimes happens at lunchtime when it’s ONE against THREE.  :)

I used a trick I also learned from Michelle for making pb&j ahead of time… put the peanut butter on both pieces of bread and THEN put the jelly on to avoid the soggy effect.  :)  I tried that method, but my only problem is that the Wadester is a jelly only fan.  Sooo, I tried to give him just a bit of peanut butter and hid it all with the jelly!  :)

I’m excited about trying the Roast Beef & Cream Cheese Wraps too… Just whole wheat tortillas, Hormel No Preservatives Roast Beef, & cream cheese!   :)  I even made one for Chris to take to work!  :)

I may or may not keep this up since it is ONE MORE thing to add to my Sundays that I don’t know if I’ll have time for… but we’ll see, cuz I’m PRETTY SURE I’m going to be LOVING lunchtime this week!!

    Love the fruit cups…I think I recognize the containers. KFC? ;) And the roast beef wraps sound great! We need something new in the sandwich department, and that might change up hubby's lunch just enough!

    Yes, they are KFC!! They were actually passed on to me by my MIL, but they are the best little bowls. Perfect for the little bit of something you're left with to pack up. :)

    The cream cheese chicken looks like a variation of one of my favorites, which is chx, any color(s) bell peppers, and taco seasoning. After cooking, add tortillas, sour cream (optional), cheese, and salsa (optional).

    I read her post about the lunch prep and I think we're going to try prepping the fruit, snacks, etc. but not the sandwiches. I'm just afraid that they'll get soggy… … We get the frozen shrimp from Sam's sometimes too and it is fairly reasonable – though just not the same as the $1/lb fresh Maine shrimp, so we don't get it often. ;) I am LOVING having my meals all prepped. LOVING it! I hope the first day of school is going smoothly. Did you take a traditional "first day of school pic?" ;) Can't wait to hear how she likes the video schooling! ;)

    You are too funny! thanks for referencing me in your post. Going to have to check out that cheap shrimp and that recipe. I soooooo need to do this plan! Every week, I think I am going to start it and my Monday doesn't go according to plan and I am back to work and frozen pizza for dinner – LOL! :)
