What are you eating this week? I’m looking forward to the Cream Cheese Chicken and the Spinach Pasta Bake this week! Those are two meals that we haven’t had in a while, but they are so good! I am only doing ONE chicken thigh for each of these meals which really saves us moolah in the budget. Yes, I did say ONE chicken thigh!

I had actually considered going vegetarian on them and just nixing the chicken altogether. I think they both would be delish even without any meat.

A bag of frozen chicken thighs is $6.29 at Aldi’s. I used it for our Sunday lunch, and will use it for these two meals, AND I have some left over. It’s amazing how far a chicken thigh/breast will go if you are motivated! Shredding it with a spatula in the crockpot and serving it with rice or potatoes also helps to stretch it out!

Kind of crazy considering the Cream Cheese Chicken recipe calls for an entire bag of frozen chicken.

What are your tricks on stretching your grocery dollars?

    I often add beans to stretch meat – like in taco salad or chili, I’ll only use a little burger and mix in black beans, etc

    Sometimes, I just eliminate the meat all together in quesadillas, a pasta dish, etc. – and make it just veggies.
