Cucumber Pizza Appetizer & Some Fantastic News!

This week is the fabulous Bloggy Progressive Dinner!  Woot!!  I am SO excited to share this perfect little appetizer that is just right for Spring!

I searched Pinterest for some appetizer inspiration and found just the one.

It meets all my criteria… few ingredients, easy, and delish… PLUS it looks pretty spectacular too.

I kind of cheated and said there were three basic ingredients, and as you can see there is obviously FOUR, but I decided the dill weed is just a sprinkle and isn’t completely necessary so we can just classify it as a superfluous ingredient, right?  :)

  • Pillsbury French Bread Loaf
  • Cucumber
  • 4 oz Cream Cheese Tub
  • Dill Weed {optional}

Open up the can of French Bread and slice into rounds.  Make them as thick as you like.  I ended up with 14 rounds out of one can.

Spray pan with cooking spray and flatten them a bit on the pan.

Bake at 425 degrees for 8-10 minutes.

While they are baking, you can slice your cucumber up.

When they are nice and brown, take out your crusts!

I didn’t even wait for mine to cool, but you can if you’re more patient.

Spread on some Cream Cheese. Then place a cucumber slice on top, and kind of smush it down in the cream cheese just a bit to set it.

Now sprinkle a bit of the dill weed on top for some extra zing.  You really don’t need this, but I think it adds a bit of flavor and it makes ‘em look purty too.

These were so good, and you could do any other veggie on top too, but the cucumber is a pretty easy and delish choice I think!

These were YUMMO!  I even ate them up throughout the rest of the week straight out of the fridge.  They were surprisingly even tasty cold!!

I hope this appetizer has really hit the spot and not left you starving on your way to your next course…coming tomorrow!  :)

Okay… here’s the BIG news… I was shocked to get an email from someone at CBS News yesterday.  To be honest, I had to question whether or not it was legit.  I mean really? CBS News?  Has life with my brother, the skeptic, taught me NOTHING?

I did some internet “research” and decided she did seem to be an actual CBS employee.  Really hope so now, since I gave her my full name and city and state.

I DID ask her if she was a serial killer, though, and she said no.

So I think I’m good, right?

Long story short, the CBS Morning News is doing a segment on Pinterest and how moms across the country are using it for inspiration, and she wanted to possibly use some of my Pinterest Party pics to show on the air.

If she’s not a serial killer, and they choose to use any of my pics, it is supposed to air Wednesday or Thursday morning sometime from 7-9 am.

Pretty amazing, right?  So if you happen to remember, bribe the kids and turn on the news to see if you can catch it.  Hey, if they are talking about Pinterest, I need to watch it anyway.  :)

Proof that obsessive pinning really DOES get you somewhere, right???

    The appetizer looks delicious and easy to make. My kids love cucumbers and pizza what a great combination.
    CONGRATULATIONS!!!! on the wonderful news. Is this for your local news? if not I am going to have to TiVo since will be at work around that time.

      It’s actually for the national cbs morning news, if you can believe it! I can’t really believe it, but who knows. Stranger things have happened. :)

    yummy, Renee! Of course easy, simple and yummy! :) I will have to try these – maybe even next week during Missions Conferece – think I have 5 meals and counting I have to bring next week so I am going to be pulling out all the recipes, ideas, etc. out of my hat and need QUICK, EASY, AND yummy food!
