Menu Monday… New Tips & Tricks!

This HOT weather is still kicking my tail, and I tried to go “cool” again this week using the Crockpot, Grill, and Stovetop some as opposed to the beast of an OVEN that turns the kitchen into a furnace! 

I’m excited about two new recipes I’m trying this week courtesy of {you guessed it} the amazing Pinterest!  If ever you are lacking for cooking inspiration, puh-lease just type a few words into Pinterest, and you’ll find INCREDIBLE, mouth WATERING delicacies just begging you to try them. 

I found this ingenious post on freezer cooking there, and it has inspired me to take an extra step or two each week to put a few meals in the freezer for later!

She did 46 meals in about 4 hours!  She basically just took 7-10 recipes and made a whole honkin’ bunch.  She has the best tip ever for freezing casseroles without using up your good dishes too that is just brilliant {scroll down near the bottom of the post to check it out}, though I do LOVE that she is a Ziploc Lover like moi! 

She’s the one that I got the fab idea to prop the ziploc in the pitcher while you fill it!  Genius!

My takeaway from it is that if I just pick a recipe or two each week that are simple and just double them, I’ll invest a few more minutes, but I’ll come out with some completely extra meals for later!

This week, I doubled the Crockpot BBQ Chicken and the Roasted Shrimp, and I split the Black Bean Quesadillas since we always have GOBS of leftovers.  That gave me THREE EXTRA meals going to the freezer!

SEVEN meals in just about 50 minutes…  Say WHAT??
