I’m still menu planning and prepping… even at Christmastime.  Most of our week is filled with the hustle and bustle of Christmas celebrating, but we’ll have a few normal-ish nights eating at home.  :)

I’m really excited to try the Crockpot Chicken & Dumplings tonight.  Mmmmm!  It’s one of those perfect winter recipes to warm up your bones.  :) Of course, with our unbelievably warm weather lately, who knows if winter ever really will get here.  :)  As with all the recipes I use, this one is EASY!!  I love that it uses refrigerated biscuit dough for the dumplings!!

And a bonus, I get to try out my new Crockpot!  We celebrated Christmas with Chris’s side of the family last weekend, and I got a Cuisinart 3.5 quart Crockpot with a digital timer!  Whoohoo!  My other one is about a 6 quart I think.  It’s HUGE and way too big for what our family needs.  Since it’s SO ginormous, it cooks everything RIDICULOUSLY fast too which can sometimes result in dried out dinner.  :(  I’m excited to try my new, more normal sized one today!!

The Tilapia is also a favorite… easy and healthy, AND it’s yummy.  ;)  You just broil the tilapia a few minutes…  Take it out and brush the parmesan butter mixture on both sides broiling a few more minutes on each side.  Delish!

I hope we all can enjoy this week of Christmas Craziness!!  Remember to take a breath every now and then and make some holiday memories with your loved ones.

    looks like a great week! i love that u celebrate with family before christmas. now that i have a daughter i think i will start something like that with extended family so i can stick to tradition at my aunts on chrustmas day
    My menu plan this week is pretty much just fast food and leftovers with all the running around to do!
