Sunday… On OUR WAY to DISNEY!!  WAHOO!!

Oh my, are these some E-A-S-Y and D-E-L-I-C-I-O-U-S meals this week!!!  I’m talking EASY, peeps!   I’ve made the Ham & Cheese Sliders before, but I am trying a different and better looking version this time… from a good friend and awesome cook!  She just started sharing all her cooking secrets on her new blog… Cooking Unbound… so go over and check her out! These were a hit last time, but there was WAY too much sauce mixture, so I think this new variation will be a WIN!  I love how she says to just keep all the rolls attached and layer your ham & cheese slices on the whole attached section of the rolls! {If that doesn’t make sense, go look at her blog.  She has pics for us simple peeps.}  :)

What’s funny about the Meatballs and Hawaiian Chicken is that I repinned them on Pinterest at two different times, and then realized during my menu planning that they were from the same blog!  :)  She must be a girl after my own heart because these recipes couldn’t BE any easier.  They each have THREE ingredients, and they involve dumping them all in the crockpot and walking away blissfully!!  Okay, maybe I added them last part, but it’s totally true!!   I love using the crockpot, but my biggest problem with it is that I am retarded and just FORGET to get the silly thing out and get dinner started!

I couldn’t find the Hawaiian BBQ Sauce called for in the recipe.  I’m thinking it might be something only at Target?  Instead I combined 1/2 bottle of Lawry’s Hawaiian Marinade and 1/2 bottle of Sweet Baby Ray’s BBQ sauce.

Both of these recipes call for a bag of frozen chicken or meatballs.  Seriously, does anyone eat a whole bag of frozen chicken in one meal??  I am dividing both of them and sticking one of each in the freezer!! 

I have come to the decision that I am only to going to do Crockpot Freezer Meals.  I discovered something about myself. If I had a crockpot meal in the freezer I was MUCH MORE likely to want to grab it, but if it was something I had to try to thaw and cook or bake in the oven, I was more than happy to LEAVE IT in the freezer.  :)  Since that is really not the point of having a freezer meal stash, it is crockpot only meals to the freezer from now on!  :)

Thursday is Clean out the Fridge… and Friday and Saturday are Freezer Meals. {I am loving the crockpot freezer meals… seriously!}  Then we are HITTING THE ROAD Sunday for Disney!!

I told you these recipes are SO EASY this week, and look how effortless it is to stock your freezer just by splitting recipes and sending one to the freezer!

And our lunch menu…

  • PB&J
  • Pizza Bites
  • Ham & Swiss Wraps
  • Egg Salad

Lunches are still taking me FOREVER… probably because I am going for the wow factor with sandwiches in shapes and things like fruit kabobs.  :)  Instead of toothpicks this week, I found the coolest little plastic cocktail forks… shaped like swords!!  The kiddos loved them!! They were only a buck and are made of hard plastic, so I plan on washing and reusing them… win, win!

The Pizza Bites are from the frozen section…Farm Rich brand.  I covered the pan with foil and wrote the baking instructions right on the foil.  At lunch time, I will uncover, pop in the oven and lunch will be on its way!  I know getting the bag from the freezer and plopping them on the pan is pretty easy itself… but really, part of the point of this meal prep is the MENTAL battle already being won.  It just makes me feel BETTER about the meal coming to know that as much as possible is already prepped and ready!  Maybe that isn’t really necessary for you, which is totally rad.  Whatever floats your boat!

Love my earbuds and apron!   Not to mention my other two most important essentials, NOT pictured… my two boys snoozing!  Davis woke up while I was still working on lunches, and the little cutie thwarts me by teetering in the kitchen with BIG grins wanting his momma!  :)
