Menu Monday

Monday… Shrimp Scampi Penne {from last week}
Tuesday… Crockpot Chicken
Thursday… Leftovers
Friday… Pizza Night
Saturday… Hamburger Dip {for our SS Party}

 

This is our first week back on a NORMAL schedule of Chris working 8 to 5 since the end of December!  Wahoo!  Today is his FIRST DAY at his new job, and this means that he will be home to eat dinner WITH US instead of eating everything reheated each night.

Our French Toast Bake was a big hit on vacay!  I would definitely try it again, but I would probably try halving the recipe since we ended up having to toss the leftovers. I did make it at home literally right before we left, and Chris actually sprinkled the topping on and popped it in the oven while I was feeding Davis our first morning of vacation! 

I tried a new trick this week during my prep. I took a Crock Pot Liner {If you like to use the Crock Pot and haven’t tried these, you MUST check them out!} and put it all the way inside a gallon size Ziploc bag. I then put all the ingredients inside the crock pot liner which was inside the ziploc bag. {Is this making sense?} I clipped the liner shut with a clothespin and then zipped the bag shut.  In a perfect world, I’ll be able to pull out the liner, plop it in the crockpot and be ready to go just like that. 

We shall see.  Putting the cream of mushroom in was a bit of a MESS since it wouldn’t just come out with a shake.  I had to spoon it in and the liner DID NOT want to stand open. 

It took me around 30 minutes to prep THREE meals!

This is week SIX of doing the Five Meals in One Hour plan! Is is a habit yet if I’ve done it six times? 

I hope so, cuz I’m still diggin’ it.

    How do you "prep" the shrimp dish? do you make the shrimp and then just reheat?

    What kind of cheese for the hamburger dip? I love the dip recipe I always use (from Jean T) but am willing to try something different.

    Glad your trip went well.

    I bought a frozen bag of shrimp… it was about $5…that was precooked. I always follow the recipe instructions just up unto the bake/cook part. So with the shrimp I put them in the baking dish, poured the butter mixture over them and then covered the dish and put it in the fridge.
    Tonight I will take it out of the fridge and bake it according to the directions.
    Since the recipe for the Hamburger Dip didn't specify I figured I could just use shredded cheese, though I don't think I'll use a lb… We'll see how it goes.
    I'd love to hear Jean's recipe. I'm sure it's yummy!

    If the ziploc bag will stand open, just use the clothespins to hold the crockpot liner to the ziploc bag.
