Menu Monday!

Can you believe there is nothing new on our menu this week??! I know, shocker, right?  The Broccoli Casserole is actually a recipe passed on from Chris grandmother to Chris’s Mom to Me!  :)  Although she always serves it as a side, and I add chicken to the ingredient list and call it a meal! 

At this point in our life with little bird eaters, we don’t come CLOSE to finishing off a 13×9 casserole dish.  NOT.EVEN.CLOSE, people!  I really hate, hate, hate to throw away food! Arghh!  One way for me to cut back on the wasted food is cutting a 13×9 dish into TWO smaller 8×8 dishes.  I made a previous decision not to freeze anything that wasn’t a crockpot meal, BUT since I had a square foil pan I went for it.  :)  It will be as easy as a crockpot meal since I’ll be able to bake it in that same pan!

If you haven’t tried the Ranch Pork Chops, you really should!  It is one of the easiest, cheapest, yummiest meals!  THREE ingredients and a meal fit for company? Can’t beat it!

    I was not sure what to cook for dinner tonight and decided to try the ranch pork chops! I am going to serve it over rice since I am out of potatoes. Thanks for posting your meals every Monday!

    I look forward to this every week :) Tonight I'm doing crock pot spaghetti and meatballs (5dinners1hour). I hopped over to orgjunkie and was inspired to put together a month menu. We'll see how well it goes! I am including the ranch pork chops, broiled steak bites and several of your past recipes. Thanks for doing this!!!

    You really do have fantastic tips! I also cut the 9×13 casseroles in have, and I find that it's worth the investment to purchase the foil square pans (which I can reuse several times anyway). I've found that covering them with wax paper first, and then covering with foil/saran wrap practically eliminates freezer burn (although I have to make a note on the top to REMOVE the wax paper before baking, lol!)

    So, Renee, do your kids really eat or at least try your new meals? It is like pulling teeth around here to accomplish such a thing. Well, they do try the new stuff, but all of them actually liking it enough to become a regular meal is a rarity.

    Wow! Your food looks awesome!!

    I have the Opposite problem — a 9×13 pan is barely enough!!! ;)

    For freezing casseroles, I've always used the freezer quality zip lock bags. They stack nicely in the freezer.

    Jessica…They are forced to eat it actually as mean as that sounds, ha ha! Haylee {age 8} will obey and eat it even if she doesn't like it. Wade {age 3} will usually NOT eat much if he doesn't like it.

    It's a HUGE ongoing issue getting him to finish his plate… one I hope will get easier with age.

    I read a strategy recently from a mom of 8 or 10 kids where they set a time limit on eating and without any fussing or raising of voices, when the timer goes off the plate is taken away. If they didn't eat b/c they didn't like it, then theirs is put in the fridge and that is what they eat the next time. She said it was a non issue in their house b/c they don't let it become one.

    It is hit or miss with new recipes, but if most of us like it, then it becomes a repeat! :)

    Jolene, are you trying the crockpot spaghetti and meatballs? I couldn't believe that one! Dry noodles in the crockpot?? Wow!

    Busymom, I can't IMAGINE cooking for 10 kiddos!! I know that before long my two LITTLE boys will be teenagers and eating us out of house and home! :)
