I love that all I need to do to find some inspiration for my upcoming menu is just peruse the amazing PINTEREST!!!  I am trying THREE NEW recipes this week and hope they will all be winners.  :)

Five meals {plus TWO I’m taking from the freezer} in just 48 minutes…

The Chicken & Spinach Pasta Bake ended up being much HUGER than I expected.  The recipe called for an 11×17 dish, which I assumed was supposed to be 11×7!  But, no.  Not quite.  I ended up dividing it between two dishes and actually sent Haylee down to surprise our best neighbors, Sam & Heather with a prepped meal to enjoy! 

I guess that is one perk of living next to me, ha ha!  :) Though, I’ve never tried this dish before, so I’m really hoping I didn’t send them something not so great! 

On our lunch menu…

    • Whole Wheat Pizza Toast
    • Ham & Cheese Wraps
    • Farm Rich Pizza Bites

My Lunch Prep time was coincidentally the same as my Dinner Prep… 48 minutes!

I opted for a shorter prep time this week and am going to just wait until lunch time to fix the Pizza Bites and the Pizza Toast.  I don’t know how making sandwiches can take me so long!  But, hey!  At least those are DONE for the  week, and it’s one less thing to worry with!

    Oooh, your Crock Pot Cheesy Chicken and Rice looks SOOO yummy! I think my kids would love that. It's definitely going on the menu for this week. And, I think I already have all of the ingredients! Thank you!!

    Great idea to prep all the meals beforehand. I prep some things, but not entire meals; I will have to consider that!

    Love these! I had to go back to work full time a few years ago so when it comes to making dinner each night well, I am just exhausted most nights and then you factor in kids' activites…ugh! Will definitely be giving this meal prep idea a try. Thanks for sharing.

    Thanks everyone! Meal prepping is our way of life now! :)

    Jolene, the Chicken and Rice was so good, and it was easy to prep ahead. I just cooked the rice in the micro, drained the corn, and put all that in a plastic bowl with my shredded cheese and put it in the fridge. Towards the end of the cook time, I got that bowl out and poured in crockpot with the chicken. It was great!
